Roasted Veggie Sticks

My toddler has been picking his food lately and I noticed that I haven’t been feeding him vegetables. I decided to make these roasted veggie sticks, so when we passed by the grocery the other day, I picked out some carrots and zucchinis – just the right amount of orange and green color for baby’s food.

This is very easy to make and you can use other vegetables like squash, eggplant, beets, sweet potato, etc. You can try out any other vegetables you can think of and make variations in flavor like add herbs, spices, cheese, the list can go on. This is not just for babies but also very healthy for adults too. And to add, this is not just a great accompaniment to meats but this is also great for snacking instead of eating junk. My son preferred these veggie sticks over the roasted chicken and rice but he did finish his meal!

Before cooking

1. Cut out the vegetables into sticks or equal sizes so that they cook equally in the oven.
2. Drizzle some olive oil, pepper, salt, minced oregano and mix all together.
3. Cook in the oven at 180C for 10-15 minutes or until golden brown.

These will turn out soft, especially the zucchini but they are really tasty. The cooking in the oven will make the veggies caramelize and give them a sweet hint. Let your baby eat these with their hands! They’ll enjoy it! 🙂
